Ingredients

For the Ribs:

  • 2 racks of pork ribs (baby back or spare ribs)
  • 1 tbsp olive oil

For the Dry Rub:

  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp chili powder
  • 1 tsp ground cumin

  • 1 tbsp Dijon mustard

Instructions

  1. Prepare the Ribs:

    • Preheat your oven to 300°F (150°C) or set up your grill for indirect heat.
    • Remove the membrane from the back of the ribs for better flavor and texture.
  2. Apply the Dry Rub:

    • Mix all the dry rub ingredients in a bowl.
    • Brush the ribs with olive oil, then generously coat both sides with the dry rub.
  3. Cook the Ribs (Oven or Grill):

    • Oven Method: Wrap the ribs tightly in aluminum foil and place on a baking sheet. Cook for 2.5–3 hours until tender.
    • Grill Method: Place the ribs on the cooler side of the grill, bone-side down. Cover and cook for 2–3 hours, maintaining a temperature of 275°F–300°F (135°C–150°C).
  4. Make the BBQ Sauce:

    • In a saucepan, combine all BBQ sauce ingredients and simmer over medium heat for 10–15 minutes, stirring occasionally, until thickened.

    • Remove the ribs from the oven or grill and brush generously with BBQ sauce.
    • For Oven: Increase the oven temperature to 450°F (230°C) and return the ribs uncovered for 10–15 minutes.
    • For Grill: Place the ribs over direct heat for 5–10 minutes, flipping occasionally to caramelize the sauce.
  6. Serve:

    • Let the ribs rest for 5–10 minutes before slicing. Serve with extra BBQ sauce on the side.
